Yogurt Slices with Forest Berries
Vanilla sponge, yogurt cream and forest berries in jelly.
Cocoa sponge, egg-yolk buttercream and torched meringue.
We build the American slice in three layers. A moist cocoa sponge sits at the bottom, a rich egg-yolk buttercream in the middle, and a meringue whipped over steam on top. We finish it by torching the meringue until golden.
Baked to order – please order 48 hours ahead.
The meringue is whipped over a water bath so the sugar dissolves completely and the foam holds its shape even the next day.
