The mousse is whipped from fresh raspberry purée and cream, so it stays light and full of fruit. The acidity of the berries keeps the sweetness in balance. In a small cup it is one or two spoonfuls.

The raspberry purée is sieved – the seeds would be a nuisance in such a delicate mousse.
