Sheep's milk bryndza is worked into the yeast dough, giving the scones a salty tang and a soft crumb. Brushed with egg, they bake to a deep gold. A Slovak classic that never survives long on the table.

Bryndza is salty on its own, so the dough gets far less salt than you would expect.
