We stretch the strudel dough by hand until it is thin enough to see through. It is filled with pieces of juicy apple and dusted with ground cinnamon. Baked, the pastry turns crisp while the filling stays juicy.

The dough is stretched over a cloth until you could read a newspaper through it – the old test of a proper strudel.
