Vegan shortcrust shell with coconut cream and raspberries.
Cocoa shell with blueberry filling and ganache.
A cocoa shortcrust shell is filled with blueberry compote and covered with milk chocolate ganache. The tart berries cut through the sweetness of the milk chocolate. A small tartlet with a clear flavour.

The ganache is emulsified at 35 C – any hotter and the chocolate would split from the cream.
