Hand-stretched strudel dough is filled with a delicate curd cheese and raisins. We flavour the curd with vanilla and lemon zest so it never tastes flat. Baked, the filling turns creamy and the pastry crisp.

The raisins are soaked in rum before filling so they soften and do not draw moisture from the curd.
