Crisp choux pastry is filled with vanilla custard and caramel whipped cream. The top is glazed with caramel we cook in-house. A cream puff is at its best on the day it is made, while the pastry is still crisp.

We cook the caramel dry, without water – it gets a darker colour and a pleasantly bitter finish.
