Apple Strudel with Cinnamon
Hand-stretched pastry filled with apples and cinnamon.
Dough stretched by hand, not unrolled from a frozen sheet.
Apple, poppy seed, quark and walnut strudel, sold whole or sliced. The apple one uses tart varieties (Idared, Jonagold) — sweet apples bake out flat and taste of nothing. We stretch the dough by hand over a cloth until you can see through it. Best served warm; the next day, eight minutes at 160 °C brings it back.
