We bake the puff pastry until crisp and fill it with a thick vanilla custard. The custard is covered with whipped cream and finished with melted chocolate. A simple dessert that stands or falls on the quality of its cream.

The custard is cooked from real vanilla and milk, never from an instant mix – that is why it is beige rather than bright yellow.
