The cocoa sponge is spread with sour cherry jam for acidity. On top comes a thick chestnut filling, finished with a layer of whipped cream. Chestnuts and sour cherries are a classic pairing that works best in the colder months.

The chestnut purée is worked with butter and rum – without fat the filling would turn dry and crumbly.
