The Paris-Brest is shaped like a bicycle wheel and baked from choux pastry. We fill it with pistachio and vanilla cream and add fresh raspberries. Their acidity cuts through the rich nut cream.

The dessert was created in 1910 to honour the Paris-Brest-Paris cycling race, hence the wheel shape.
