A cocoa shortcrust shell is filled with blueberry coulis and covered with milk chocolate ganache. The tart blueberries cut through the sweetness of the milk chocolate. Finished with fresh fruit.

The coulis is cooked briefly so the blueberries keep both their colour and their acidity.
