Coffee and amaretto soaked sponge with mascarpone cream.
Sponge fingers are soaked in strong coffee with amaretto and layered with an egg-yolk mascarpone cream. A dusting of cocoa on top adds a gentle bitterness. Creamy in texture, distinctly coffee in flavour.

The coffee must be cold – hot coffee would turn the sponge fingers to mush.
