Our baked cheesecake goes into a water bath at 150 °C and cools in a half-open oven — which is why the top does not crack. The base is crushed biscuits and butter, the filling cream cheese with cream and vanilla. No-bake, gelatine-set versions run seasonally: raspberry in summer, roasted pear in autumn.
